Processing Achiote Seeds. Traditional Indigenous Uses, Benefits, and Cultural Significance

After harvesting tons of achiote seeds, our team has gathered to process these important seeds for the Costa Rican culture. In this blog we will explain some of the benefits and uses of Achiote seeds based on knowledge that our indigenous friends from the Bribri and Ngobe tribe have shared with us. 

Known internationally as annatto, achiote (Bixa orellana) holds an important place in the traditions, cuisine, and natural medicine practices of many Indigenous communities.

From natural food coloring and culinary applications to skin care, cultural practices, and plant-based remedies, achiote continues to be a valuable resource that connects people to the land and their ancestral knowledge.

A Natural Food Coloring and Flavor Enhancer

One of the most common uses of achiote seeds is as a natural food coloring. The seeds contain pigments called carotenoids that create a rich orange-red color when infused into oils, broths, and sauces.

Many traditional Costa Rican and Indigenous dishes use achiote to add color and subtle earthy flavors to rice, soups, stews, fish, and vegetables. Before synthetic food colorings existed, achiote provided a safe and natural way to make food more vibrant while also adding nutritional value.

TRADITIONAL MEDICINAL USES OF ACHIOTE

According to Indigenous knowledge shared by members of the Bribri and Ngäbe communities, different parts of the achiote plant have traditionally been used to support wellbeing.

The leaves are often prepared as teas or infusions, while the seeds may be applied externally or incorporated into natural remedies. Traditionally, achiote has been used to support digestive health, soothe minor skin irritations, and promote overall vitality.

While many of these uses are rooted in generations of traditional knowledge, they should not be considered substitutes for professional medical advice.
